Banana Bread Pancakes

My absolute favorite pancake recipe of all! I found and modified this recipe from sixsistersstuff.com. If you love banana bread but don't have and hour and half to make/bake it, then this recipe is for you! Hope you love the pancakes as much as I do. Super yummy :)

2 cups All-purpose Flour
2 teaspoons Baking Powder
1/4 teaspoon Salt
1/2 cup Brown Sugar
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1 Egg
3/4 cup Milk
3 Large, Ripe Bananas, Mashed
2 Tablespoons Butter, melted
1 teaspoon Vanilla Extract

~In a large bowl, whisk together the flour, baking powder, salt, brown sugar, cinnamon and nutmeg. Set aside.
~In a separate bowl,  whisk together the egg, milk, bananas, melted butter and vanilla. Slowly add in the flour mix to the banana mixture; the batter will be lumpy.
~Heat a non-stick skillet or griddle over medium heat. Scoop out about 1/3 to 1/2 cup of the batter into rounds and cook until both sides are golden. Repeat with remaining batter. Serve with butter and or syrup if desired. They taste great plain! :)

Baked Cinnamon French Toast Sticks

I stumbled upon this great recipe this morning on tastykitchen.com's (erin, table for 7) website and decided it was a keeper! Very easy, very tasty, and much healthier and cheaper than the frozen french toast sticks at the store. The kiddos loved them! :)

6-8 Slices Whole Wheat Bread(use dense, hearty bread for best results)
3 whole Eggs
1 Tablespoon Ground Cinnamon
¼ cups Milk
¼ cups Whipping Cream
Cinnamon Sugar, For Sprinkling (optional)

Preparation Instructions
~Preheat oven to 375ºF. Line a large cookie sheet with aluminum foil or parchment paper. Spray it very well with nonstick cooking spray. Note: if you use soft, squishy bread, it will stick pretty badly to the pan, so use parchment paper or be generous with the cooking spray!
~Cut and slice bread into long, thick slices. 
~Whisk eggs, cinnamon, milk and cream together. Pour into a pie plate or flat dish. 
~Dip bread slices in egg mixture and place on cooking sheet. 
~If desired, sprinkle with cinnamon sugar. 
~Bake for 10 minutes, then flip sticks and cook an additional 8-10 minutes.
~Serve with little bowls of warm maple syrup for dipping 

Serve immediately or freeze for later.
